Great little lunch snack
2 tbsp Olive oil
2.50 Sushi nori sheets
350 g Silken tofu
250 g Boiled potatoes
100 g Breadcrumbs (Plus more to cover)
½ Onion
1.50 tsp Mixed herbs
1 tsp Minced garlic
1 tsp Salt
Lemon wedges

Boil the potatoes

Blend the nori sheets into a powder

Transfer the cooked potato and nori powder into a bowl and add all the other ingredients

Mix into a dough

Form into 10 flat patties and cover in breadcrumbs

Fry in 2 tbsp oil for a few minutes until golden

Serve with lemon wedges, salad and a sauce of your choice. (I use garlic cashew cream or liquid gold)
