Ingredients

Yields
  • 1Red onion (1/2 cut into wedges 1/2 finely chopped)
  • 100gKale (Shredded)
  • 2tbspTomato puree
  • 2tbsptomato ketchup
  • 2tspSmoked paprika
  • 1tbspCurry powder
  • 2Garlic cloves (Crushed)
  • 1Sweet potato (Chopped into bits sized pieces)
  • 2White potatoes (Chopped into bits sized pieces)
  • 1tbspHenderson's relish
  • 6Vegan sausages
  • 200mlBoiling water

Instructions

    Preheat the oven to 200 degrees.

    Add the sausages, potatoes and onion wedges to a baking tray with a drizzle of oil and salt and pepper.

    Cook for 30 minutes (or until potatoes are cooked).

    Heat a pan with a drizzle of oil and add the chopped onion until softened.

    Add the garlic, curry powder & smoked paprika and cook for 1 minute.

    Add the tomato puree, Henderson's relish, tomato ketchup and the boiling water and give everything a good mix until gravy consistency. Set aside.

    Add a drizzle of oil to the kale and sprinkle over the sausages. Cook for a further 4 minutes until the kale is crispy.

    Serve the bake was the curried tomato sauce drizzled over the top.
