Pret-style cookies - So good!!
Dry Ingredients
43 g Caster sugar (I used golden)
112 g Soft light brown sugar
4 g Salt
40 g Nuts roughly chopped (I used a mix of walnut and pecan as that's what I had but almond or most other would work really well)
112 g Dark chocolate, chopped
205 g Plain flour (I used wholewheat)
20 g Cocoa powder
½ tsp Bicarbonate of soda
Wet Ingredients
65 g Coconut oil melted
72 g Nut butter (I used peanut but almond works very well too)
100 g Golden syrup
40 g Water
1
Preheat oven to 180 degrees C and prepare baking trays with greaseproof paper
2
Mix wet and dry ingredients separately and then combine
3
Bring dough together (using hands is the easiest way) and split into 8 balls
4
Flatten balls with the palm of hand and place on tray
5
Cook for 8-10 minutes and then leave to cool for 15 mins before eating
