Quick and simple weekday fajitas!
Get those sides ready to go, you don't want to be caught out!
Slice the onions nice and thin
Slice the mushrooms
Cut the peppers into sticks
Mince the garlic
Measure out the spices and put in a prep dish
Heat the oil in a nice heavy base frying pan over a medium heat
Toss in the peppers, onions, chilli powder, cumin, smoked paprika, and salt.
Cook until the veg begins to soften (5-8 mins should do it)
Add in the mushrooms and garlic and continue to cook for another 5-7 minutes until everything is just cooked.
Pop the tortilla wraps in the microwave as per pack instructions (usually less than a minute)
When you are nearly ready to go, crank the heat up for a minute to give it a sizzle!
Bring the pan to the table for that added flair, just don't burn your table or more importantly the person you are cooking for!
